It’s Feta Fiesta Time!
I had been meaning to make a feta pizza for a long time. And if I do say so myself, this pizza turned out pretty well. This is the story of my Feta Fiesta.
However, feta needs the right partners, so it was time to explore the contents of the fridge. And pretty quickly I was able to create a combination that sounded delicious in my mind. A package of mozzarella was waiting in the fridge. Then I saw sun-dried tomatoes. There was also fresh basil in the vegetable drawer. Something was still missing. And then I remembered the red onion that needed to be used before it started its journey on its own towards the compost. This Mediterranean taste experience would be completed with a light touch of olive oil.

- Mozzarella (slices)
- Feta cheese (crumbled)
- Sun-dried tomatoes
- Red onion (sliced)
- Fresh basil leaves

My Feta Fiesta
As I waited for the pizza to bake, the vision of my Feta Fiesta formed piece by piece in my mind. I imagined the creamy mozzarella melting into the tomato sauce, while the salty feta cheese crumbles remained slightly intact on top. I imagined the thin red onion rings softening in the oven, turning sweet instead of tart. After baking, I would add the fresh basil, still vibrant and fragrant. And finally, a thin drizzle of olive oil, which would complete the wonderful Mediterranean aroma and taste.
When I took the pizza out of the oven, the smell was intoxicating. The mozzarella was still bubbling hot and had turned golden brown in places. The edges of the pizza were a little charred in places, which made me worry that I had overcooked it. Although the edge had dried out a little, it was wonderfully crispy.
After baking, I drizzled some olive oil on top, which glistened on the pizza as if it had received a luxurious upgrade. I added the basil leaves last. The leaves wilted slightly in the heat and released a fresh, peppery scent that made the whole pizza feel instantly perfect.
Time to Taste
I let the pizza sit for a moment, and then it was finally time to taste it. And immediately I felt a sense of accomplishment in my mouth The mozzarella brought richness, while the feta added sharp bursts of salt. The feta had softened in the heat but retained a nice chewiness. The edges of the red onion slices had curled and caramelized. They had become sweet and soft.
And what about the sun-dried tomatoes. They were quite large in size and also played a big role in my pizza. but they had definitely earned their place. I love how they offered intense little bursts of concentrated flavor. Each bite was layered, warm, and a little dramatic in the best possible way. The basil leaves brought a freshness to the taste, balancing the flavor.
