It Became the Mediterranean Medley

It all started on a rainy day in July, when I was craving something refreshing. I wanted something that would warm my body and soul. Something that would remind me of the warm atmosphere of the Mediterranean. And for those of you who already know me, it may not come as a surprise that the solution was pizza. A Mediterranean pizza would solve all my worries on this rainy day.

A Mediterranean pizza needed ingredients to make it, so I started searching the fridge and kitchen cabinets, determined to make a pizza with all the ingredients I could find. The first find was a couple of ripe tomatoes in the vegetable drawer. Behind them was a lone red onion, still crisp and full of color. This was starting to look promising. But, I needed something salty for my pizza.

The problem was solved when I found a jar of olives. Right next to them was a small jar of capers. I remembered that I had bought them for a salad, but they would also be great on pizza. Digging a little deeper revealed a can of anchovies. The perfect, almost secret ingredient that always seems to be hiding until the perfect recipe is found. Now it was time to put them to use.

Just when I thought the treasure hunt was over, I noticed a block of feta cheese neatly wrapped on the top shelf of the fridge. Salty, creamy, and ready to go, it felt like the final piece of a delicious puzzle. I sliced ​​the tomato, onion and olives and cut the feta into small crumbs.

Once the pizza dough was in place, I spread a thin layer of pizza sauce. I mixed the feta cheese crumbs with the grated mozzarella and spread it on top of the pizza. I placed tomato slices, red onion, olives and a few anchovy slices on top. I added the capers only at the end of the baking so that they had time to warm up a bit but not lose their wonderful texture.

While baking, a wonderful Mediterranean aroma filled the kitchen, making my mouth water. I could hardly wait for the pizza to be ready. When I took the pizza out of the oven, I sprinkled some oregano on top as a finishing touch. I fought against myself to let the pizza rest for a while before eating it. After a couple of minutes, I had waited enough. It was time to cut the first piece.

The end result was a bit salty, but delicious. The first bite was fresh, tasty and perfectly balanced. The sweetness of the tomatoes met the salty olives and capers, the anchovies added a deep umami flavor, the red onion softened into sweet strips, and the feta became creamy when mixed with mozzarella. This pizza really brightened up my day, just as I had hoped. I immediately decided that I wanted to share this Mediterranean creation with you.
