How to use Capers on Pizza
Capers are the unopened flower buds of the caper bush. They are small, green, and have a tangy, salty flavor. Capers are commonly used as a condiment or garnish in various dishes, such as salads, pizzas, pastas, sauces, fish dishes, to add flavor. They are usually preserved in brine or vinegar. Here are a few tips how to use capers on pizza.
Five Reasons to Add Capers to Pizza
Adding capers to pizza is a great idea because they bring a unique flavor that combines perfectly with many other toppings. Here are some reasons why I love to add capers to pizza.
1. Little Flavor Bombs
Unlike ingredients that spread their flavor evenly, capers add little drops of tartness. Every bite is a little different, adding interesting variation from the first bite to the last.
2. Better Taste Balance
Capers provide a tangy, savory, and slightly salty flavor that complements rich ingredients like cheese, meat, and olives. Pizza is often built around creamy cheeses like mozzarella. Capers add acidity, which lighten the richness and prevent the pizza from feeling too heavy.
3. Enhanced Umami
Capers contain natural compounds that give pizza a savory, umami-rich flavor. When combined with tomato sauce, cheese, and roasted vegetables or cured meats, they deepen the overall flavor without overpowering the pizza.
4. Texture
Capers remain pleasantly firm even after reheating. Their slight chewiness contrasts with the melted cheese and crispy base, further enhancing the pizza’s enjoyment.
5. Freshness
Whether added in the last few minutes of baking or sprinkled on top of the pizza after it’s been taken out of the oven, they give every slice of pizza a bright, fresh note that perks it up.
How to use Capers on Pizza
There are different types of capers. The “nonpareil” or “non-pareil” capers, which are the smallest in size, are my favorite choice for pizza. They are often packed in brine. They have a bright, tangy flavor and are ready to use after draining.
Rinse Before Use
If the capers are packed in brine, you should rinse them before using. Rins quickly under water to remove excess brine. Allow them to air dry or pat them gently before using.
Before or After Baking?
You can add the capers either before or after baking the pizza, depending on the flavor and texture you prefer. For a balanced flavor, many chefs sprinkle the capers on top of the pizza after baking. This will help preserve their texture and bright flavor. If you want the capers to blend in better with the other ingredients and soften, add them before baking.
Before Baking
- Pros: The capers will soften slightly and blend into the other toppings, allowing their savory flavor to blend into the overall pizza
- Cons: They may become more subdued and lose some of their tanginess, and their texture will be softer
- Tip: Add them during the last 3-5 minutes of baking to allow them to warm up without drying out
After Baking
- Pros: Keeps the capers firmer and more vibrant, while maintaining their sharpness and savory flavor
- Cons: They can be a bit drier or more concentrated in flavor
How Much to Use
Since capers are very tasty, a small amount is enough. Only use about 1-2 tablespoons of capers per pizza. Spread them evenly over the entire pizza. Consider going lighter with other salty ingredients like anchovies, olives, or cured meats. This way, the flavors stay in harmony instead of turning every bite into a salt storm.
